Avocado and Chicken Salad

Ingredients
- [b]Salad[/b]
- 500 gr Cooked chicken chunks
- 2 Ripe avocados
- 15 ml Lemon juice
- 4 Tomatoes
- 2 Spring onions
- 50 gr Cashew nuts
- [b]Garlic Vinaigrette[/b]
- 4 ml Oil
- 15 ml White wine vinegar
- 5 ml Dijon mustard
- 1 Clove garlic, crushed
- 2.5 ml Castor sugar
- 15 mi Chopped parsley
- Salt
- Ground black pepper
Instructions
- [b]Salad[/b]
- Brush avocado with lemon juice
- Layer Tomatoes and spring onions with avocado on one side of the plate
- Place the chicken on other side of the plate
- [b]Vinaigrette[/b]
- Combine oil, vinegar, mustard,garlic,sugar, parsley,salt and pepper
- Shake well and pour over the salad
