Ingredients
  • [b]Salad[/b]
  • 500 gr Cooked chicken chunks
  • 2 Ripe avocados
  • 15 ml Lemon juice
  • 4 Tomatoes
  • 2 Spring onions
  • 50 gr Cashew nuts
  • [b]Garlic Vinaigrette[/b]
  • 4 ml Oil
  • 15 ml White wine vinegar
  • 5 ml Dijon mustard
  • 1 Clove garlic, crushed
  • 2.5 ml Castor sugar
  • 15 mi Chopped parsley
  • Salt
  • Ground black pepper
Instructions
  1. [b]Salad[/b]
  2. Brush avocado with lemon juice
  3. Layer Tomatoes and spring onions with avocado on one side of the plate
  4. Place the chicken on other side of the plate
  5. [b]Vinaigrette[/b]
  6. Combine oil, vinegar, mustard,garlic,sugar, parsley,salt and pepper
  7. Shake well and pour over the salad
