Canadian Cheese Soup

Ingredients
  • 3 tbs Finely shopped onion
  • 3 tbs Grated carrot
  • 3 tbs Butter
  • Dash of oil
  • 4 cups Chicken stock
  • 1/2 tsp Mustard powder
  • 1/2 tsp Paprika
  • 2 tbs Cornflour
  • 1/4 cup Milk
  • 1 cup Grated cheese
  • 1 cup Beer
  • 2 tbs chopped parsley
  • Salt and ground pepper
  • Pinch of sugar
Instructions
  1. Heat butter and oil and cook the onion and carrot for 10 minutes stirring occasionally
  2. Add chicken stock, mustard and paprika
  3. Cook over a low heat for 15 minutes
  4. Mix together the cornflour and milk and stir into the soup
  5. Cook for 5 minutes
  6. Add the cheese and beer stirring over a low heat till the cheese melts
  7. Taste for seasoning
  8. Sprinkle with parsley
