Chicken Chow Mein

Ingredients
- 2 tbs Oil
- 1 Large onion (chopped)
- 3 Sticks celery (chopped)
- 100 gr Button mushrooms (sliced)
- 600 ml Chicken stock
- 1 can Bamboo shoots (cut into strips)
- 270 gr Canned bean sprouts (drained)
- 2 tbs Cornflour
- 2 tbs Soy sauce
- Salt and pepper
- 350 gr Cooked shredded chicken
Instructions
- Heat the oil and fry the onions and celery until they start to soften
- Add the mushrooms and chicken stock to the pan
- Bring to the boil and simmer for 5 minutes
- Add the bamboo shoots and bean sprouts to the pan
- Mix the cornflour with the soy sauce and stir in 2 tbs of hot stock
- Returning to the pan, season with salt and pepper
- Stir continually while bringing back to the boil
- Add the chicken pieces and simmer for 3 minutes
- Serve with Chinese noodles
