Creamy Mushrooms

This dish on toast is just as good as a starter or for breakfast.
Ingredients
- 500 g Button Mushrooms (Thickly Sliced)
- 15 ml Lemon Juice
- 30 ml Butter
- 125 ml Sherry
- 25 ml Cake Flour
- 150 ml Fresh Cream
- Salt/Freshly Ground Black Pepper
Instructions
- Bring the mushrooms, lemon juice, butter and fortified wine to the boil
- Simmer till the mushrooms are tender
- Mix the flour and cream together to form a paste
- Stir the paste into the mushroom mixture
- Heat, stirring continuously, until the mixture thickens and is cooked
- Season with salt and pepper and serve immediately
