Fish Cakes

This quick and easy recipe for fish cakes can be alternated with salmon or tuna. Serve with chips or a green salad and a dollop of mayo or tartar sauce.
Ingredients
- 500g Potatoes
- 440g Tin Salmon
- 1 Small Onion
- 2 Celery Sticks
- 1 tbs Chopped Fresh Dill
- 1 tsp Grated Lemon Rind
- 1 tbs Lemon Juice
- 2 Eggs
- 2 tbs Milk
- 1/2 Cup Flour
- 2 Cups Breadcrumbs
- Sunflower oil for frying
Instructions
- Peel and cut the potatoes into rough chunks
- Boil them until tender, then mash until smooth
- Transfer to a large bowl and allow to cool
- Drain the salmon and add to the potatoes
- Peel and grate the onion and add to the potatoes
- Finely chop the celery and add to the potatoes
- Add the dill, lemon rind and lemon juice to the potatoes
- Mix well together, befor using your hands to form 8 patties
- Refrigerate patties for 30 min
- Beat together the eggs and milk in a bowl
- Place flour and breadcrumbs in separate bowls.
- Dip each patty in flour then the egg mixture and lastly the breadcrumbs
- Heat the oil in a heavy based saucepan over medium-high heat
- Add patties (in batches) and fry for 2 min on each side until golden brown
