This quick and easy recipe for fish cakes can be alternated with salmon or tuna. Serve with chips or a green salad and a dollop of mayo or tartar sauce.
Ingredients
  • 500g Potatoes
  • 440g Tin Salmon
  • 1 Small Onion
  • 2 Celery Sticks
  • 1 tbs Chopped Fresh Dill
  • 1 tsp Grated Lemon Rind
  • 1 tbs Lemon Juice
  • 2 Eggs
  • 2 tbs Milk
  • 1/2 Cup Flour
  • 2 Cups Breadcrumbs
  • Sunflower oil for frying
Instructions
  1. Peel and cut the potatoes into rough chunks
  2. Boil them until tender, then mash until smooth
  3. Transfer to a large bowl and allow to cool
  4. Drain the salmon and add to the potatoes
  5. Peel and grate the onion and add to the potatoes
  6. Finely chop the celery and add to the potatoes
  7. Add the dill, lemon rind and lemon juice to the potatoes
  8. Mix well together, befor using your hands to form 8 patties
  9. Refrigerate patties for 30 min
  10. Beat together the eggs and milk in a bowl
  11. Place flour and breadcrumbs in separate bowls.
  12. Dip each patty in flour then the egg mixture and lastly the breadcrumbs
  13. Heat the oil in a heavy based saucepan over medium-high heat
  14. Add patties (in batches) and fry for 2 min on each side until golden brown
