This can also be made with neck of lamb.
Ingredients
  • 4 Pork Shanks
  • 1 Large Onion ( Chopped)
  • 2 Cloves of Garlic (Crushed)
  • 25 ml Curry Powder
  • 2 ml Coriander
  • 3 Skinned Tomatoes (Chopped)
  • 3 Bay Leaves
  • 350 ml Apricot Juice
  • 25 ml Chutney
  • 25 ml Apricot Jam
  • 50 ml Lemon Juice
  • 100 ml Sultanas
  • 1 Apple (Chopped)
  • 5 ml Salt
  • Black Pepper to Taste
  • 15 ml Oil
Instructions
  1. Heat oil in a casserole pot
  2. Fry the onion and garlic till soft
  3. Add the curry powder and coriander
  4. Fry together for 2 min
  5. Add the shanks and brown
  6. Add the tomatoes, bay leaves, apricot juice,chutney, apricot jam, lemon juice and the chopped apple
  7. Season to taste
  8. Cover and simmer for 2 hours
  9. Remove the lid and increase the heat
  10. Reduce till rich and thick
