Fruity Pork Shank Curry

This can also be made with neck of lamb.
Ingredients
- 4 Pork Shanks
- 1 Large Onion ( Chopped)
- 2 Cloves of Garlic (Crushed)
- 25 ml Curry Powder
- 2 ml Coriander
- 3 Skinned Tomatoes (Chopped)
- 3 Bay Leaves
- 350 ml Apricot Juice
- 25 ml Chutney
- 25 ml Apricot Jam
- 50 ml Lemon Juice
- 100 ml Sultanas
- 1 Apple (Chopped)
- 5 ml Salt
- Black Pepper to Taste
- 15 ml Oil
Instructions
- Heat oil in a casserole pot
- Fry the onion and garlic till soft
- Add the curry powder and coriander
- Fry together for 2 min
- Add the shanks and brown
- Add the tomatoes, bay leaves, apricot juice,chutney, apricot jam, lemon juice and the chopped apple
- Season to taste
- Cover and simmer for 2 hours
- Remove the lid and increase the heat
- Reduce till rich and thick
