Indian Veg Hot Pot

This is a great dish to use up any veg laying around in the fridge.
Ingredients
- Any Veg ( Carrot, Pepper, Butternut, Cauliflower etc)
- 120 ml Oil
- 25 g Peanuts (Chopped)
- 5 ml Salt
- 2 1/2 cm Root Ginger (Grated)
- 5 ml Turmeric
- 45 ml Ground Coriander Seed
- 5 ml Sugar
- 30 ml Parsley
- Chilli to Taste
Instructions
- Heat oil in large pan
- Add salt, sugar, ginger and spices
- Fry gently for 2 min
- Add the veg, peanuts and parsley
- Cook ove a low heat till veg is done
