Indian Veg Hot Pot

This is a great dish to use up any veg laying around in the fridge.
Ingredients
  • Any Veg ( Carrot, Pepper, Butternut, Cauliflower etc)
  • 120 ml Oil
  • 25 g Peanuts (Chopped)
  • 5 ml Salt
  • 2 1/2 cm Root Ginger (Grated)
  • 5 ml Turmeric
  • 45 ml Ground Coriander Seed
  • 5 ml Sugar
  • 30 ml Parsley
  • Chilli to Taste
Instructions
  1. Heat oil in large pan
  2. Add salt, sugar, ginger and spices
  3. Fry gently for 2 min
  4. Add the veg, peanuts and parsley
  5. Cook ove a low heat till veg is done
