A family favourite and so easy to make.
Ingredients
  • [b]Pie Mix[/b]
  • 2 Jumbo Eggs (just the yolks)
  • 2 Rounded Tbs Sugar
  • 1 Tin Condensed Milk
  • Lemon Juice as required (+/- 3 lemons)
  • [b]Meringue Topping[/b]
  • 2 or 3 Egg whites
  • 2 tsp Baking Powder
  • 1/2 cup Castor Sugar
  • [b]Pie Dish Lining[/b]
  • 1 Packet Crushed Tennis Biscuits
  • Melted Butter as required
Instructions
[b]Pie Dish Lining[/b]
  1. Crush biscuits
  2. Add melted butter
  3. Press to line entire pie dish, wall of dish included
[b]Pie Mix[/b]
  1. Beat together egg yolks
  2. Add 2 rounded tbs castor sugar
  3. Add condensed Milk
  4. Pour into lined pie dish
[b]Meringue Topping[/b]
  1. Beat egg whites
  2. Add baking powder
  3. Add a dash of vinegar
  4. Add 1/4 cup castor sugar and beat
  5. Fold in 1/4 cup castor sugar
  6. Smooth over lemon mixture making peaks
  7. Sprinkle top with castor sugar
[b]Baking Lemon Meringue Pie[/b]
  1. Cook at 180°C until top starts turning golden brown
  2. Note, approximate cook time is given
