Moms Basic Mayo

Basic Mayonnaise

Mum refused to use shop bought mayo and always said nothing beat the taste of freshly made mayo
Ingredients
  • 2 eggs
  • 15 to 30 ml lemon juice or white wine vinegar
  • 5 ml dijon mustard or mustard powder
  • 250 ml to 375 ml oil either olive, sunflower, or 50/50
  • 30 ml boiling water
Instructions
  1. Place a glass bowl in warm water and then dry the warmed bowl.
  2. Separate egg yolks and beat for +/- 2 min till thick and sticky
  3. Add lemon juice or white wine vinegar [i]( to taste )[/i]
  4. Add mustard and beat for 30 seconds
  5. Add oil drop by drop til mixture starts to thicken
  6. Then add rest of the oil in a steady trickle
  7. If mixture thickens to much add a drop of lemon juice or vinegar
  8. After all oil is added beat in boiling water
  9. Finally beat one or two egg whites till soft peaks
  10. Then fold the beaten egg whites into the mayonnaise
