Basic Mayonnaise

Mum refused to use shop bought mayo and always said nothing beat the taste of freshly made mayo
Ingredients
- 2 eggs
- 15 to 30 ml lemon juice or white wine vinegar
- 5 ml dijon mustard or mustard powder
- 250 ml to 375 ml oil either olive, sunflower, or 50/50
- 30 ml boiling water
Instructions
- Place a glass bowl in warm water and then dry the warmed bowl.
- Separate egg yolks and beat for +/- 2 min till thick and sticky
- Add lemon juice or white wine vinegar [i]( to taste )[/i]
- Add mustard and beat for 30 seconds
- Add oil drop by drop til mixture starts to thicken
- Then add rest of the oil in a steady trickle
- If mixture thickens to much add a drop of lemon juice or vinegar
- After all oil is added beat in boiling water
- Finally beat one or two egg whites till soft peaks
- Then fold the beaten egg whites into the mayonnaise
