Mustard and Marmalade Chicken

Ingredients
  • 8 Chicken Thighs
  • Salt and ground pepper
  • [b]Sauce[/b]
  • 60 ml Coarse cut marmalade
  • 30 ml Wholegrain mustard
  • 60 ml Orange juice
  • 60 ml Chicken stock (1/4 stock cube)
  • 2 Sprigs of rosemary broken into pieces
Instructions
  1. Preheat the oven to 180 C
  2. Season chicken with salt and pepper
  3. Place in an ovenproof dish
  4. Blend marmalade, mustard, orange juice and chicken stock
  5. Pour over the chicken
  6. Sprinkle rosemary over the chicken
  7. Cover with foil
  8. Bake for 30 minutes
  9. Remove the foil and bake for 30 minutes more
