Mustard & Sour Cream Chicken

Ingredients
- 120 ml Sour Cream
- 2 med Size Chickens (Cut into Portions)
- 60 ml English Mustard
- 175 ml Cornflakes (Crumbed)
- 2 tsp Fresh Thyme
- 1/4 tsp Black Pepper
- 1/4 tsp Cayenne Pepper
- 1 tsp Salt
- 60 ml Butter
Instructions
- Preheat oven to 190 C
- Combine the sour cream and mustard in a bowl
- In a second bowl mix the cornflakes, herbs and seasoning
- Coat the chicken pieces with the mustard mixture
- Roll the chicken in the crumb mixture
- Place the chicken in a single layer in a shallow baking dish
- Drizzle melted butter over each piece and bake for 1 hour until golden brown and juices run clear
