Onion Tart

Ingredients
- Crust
- 2 Cups Self Raising Flour
- 3 ml Salt
- 125 ml Butter
- 125 Iced Water
- Filling
- 50 ml Butter
- 4 Large Onions (Thinly Sliced)
- 5 Chives (Chopped)
- 2 Large Eggs (Whisked)
- 200 ml Cream
- 250 ml Cheddar Cheese
- 5 ml Salt
- 3 ml Ground Black Pepper
Instructions
Crust
- Preheat oven to 200 C
- Grease a loose bottomed 26 cm pan with butter
- Sift the flour and salt together
- Rub in the butter until the mixture resembles bread crumbs
- Cut in the ice water with a knife
- Gather the dough together and shape into a ball
- Chill for 15 min
- Roll out until 2 mm thick and line the prepared pan with the dough
- Line the pastry shell with baking paper and fill with dried beans or rice
- Bake for 15 min till the pastry begins to brown
- Remove the paper and beans
Filling
- Reduce oven to 180 C
- Melt the butter and fry the onions are golden brown
- Add the chives
- Beat the eggs and cream together and stir in the cheese
- Add the onion mixture, salt and pepper and mix well
- Pour the filling into the crust and bake for 35 min or until set and golden brown
