Ingredients
  • Crust
  • 2 Cups Self Raising Flour
  • 3 ml Salt
  • 125 ml Butter
  • 125 Iced Water
  • Filling
  • 50 ml Butter
  • 4 Large Onions (Thinly Sliced)
  • 5 Chives (Chopped)
  • 2 Large Eggs (Whisked)
  • 200 ml Cream
  • 250 ml Cheddar Cheese
  • 5 ml Salt
  • 3 ml Ground Black Pepper
Instructions
Crust
  1. Preheat oven to 200 C
  2. Grease a loose bottomed 26 cm pan with butter
  3. Sift the flour and salt together
  4. Rub in the butter until the mixture resembles bread crumbs
  5. Cut in the ice water with a knife
  6. Gather the dough together and shape into a ball
  7. Chill for 15 min
  8. Roll out until 2 mm thick and line the prepared pan with the dough
  9. Line the pastry shell with baking paper and fill with dried beans or rice
  10. Bake for 15 min till the pastry begins to brown
  11. Remove the paper and beans
Filling
  1. Reduce oven to 180 C
  2. Melt the butter and fry the onions are golden brown
  3. Add the chives
  4. Beat the eggs and cream together and stir in the cheese
  5. Add the onion mixture, salt and pepper and mix well
  6. Pour the filling into the crust and bake for 35 min or until set and golden brown
