Roasted Red Pepper And Tomato Soup

Ingredients
  • 4 Red Peppers
  • 2 tbs Oil
  • 1 Onion (Chopped)
  • 2 Cloves Garlic (Crushed)
  • 1 410 g Can Chopped Tomatoes
  • 4 Cups Vegetable Stock
  • 1 tsp Chilli Sauce
  • Parmesan Cheese to Garnish
Instructions
  1. Cut the peppers into large flat pieces and discard the seeds
  2. Grill peppers on a hot grill till the skins are black
  3. Cover till cool then peel off the skins and chop the flesh up
  4. Heat the oil and fry the onions and garlic till soft
  5. Add the red pepper, tomatoes and stock and bring to the boil
  6. Reduce the heat and simmer for 20 min
  7. Allow to cool and process till smooth
  8. Return to the pan and heat gently stirring in the chilli sauce
  9. Serve in a bowl with parmesan cheese
