Roasted Red Pepper And Tomato Soup

Ingredients
- 4 Red Peppers
- 2 tbs Oil
- 1 Onion (Chopped)
- 2 Cloves Garlic (Crushed)
- 1 410 g Can Chopped Tomatoes
- 4 Cups Vegetable Stock
- 1 tsp Chilli Sauce
- Parmesan Cheese to Garnish
Instructions
- Cut the peppers into large flat pieces and discard the seeds
- Grill peppers on a hot grill till the skins are black
- Cover till cool then peel off the skins and chop the flesh up
- Heat the oil and fry the onions and garlic till soft
- Add the red pepper, tomatoes and stock and bring to the boil
- Reduce the heat and simmer for 20 min
- Allow to cool and process till smooth
- Return to the pan and heat gently stirring in the chilli sauce
- Serve in a bowl with parmesan cheese
