Rosemarys Tomato Sauce

Ingredients
- 2 1/2 kg Tomatoes
- 1 Large Onion
- 3 Garlic Cloves
- 285 ml white Vinegar
- 200 ml Sugar
- 15 ml Salt
- 10 ml Mustard Powder
- 10 ml Cloves
- 10 ml Pepper Corns
- 10 ml Whole Cinammon
Instructions
- Put the tomatoes in boiling water for 2 min then put them into cold water
- Peel skins of the tomatoes
- Grate the tomatoes, onions and garlic cloves
- Boil over a low heat until soft
- Push the mixture through a sieve using a wooden spoon to remove the pips
- Add the sugar, salt, vinegar and mustard powder to the mixture
- Put all the spices in a cheese cloth and add to the mixture
- Boil the mixture and stir it now and again till the volume has decreased by a third and is the thickness of custard
- Remove the spices
- Pour into clean bottles and seal while warm
