Rosemarys Tomato Sauce

Ingredients
  • 2 1/2 kg Tomatoes
  • 1 Large Onion
  • 3 Garlic Cloves
  • 285 ml white Vinegar
  • 200 ml Sugar
  • 15 ml Salt
  • 10 ml Mustard Powder
  • 10 ml Cloves
  • 10 ml Pepper Corns
  • 10 ml Whole Cinammon
Instructions
  1. Put the tomatoes in boiling water for 2 min then put them into cold water
  2. Peel skins of the tomatoes
  3. Grate the tomatoes, onions and garlic cloves
  4. Boil over a low heat until soft
  5. Push the mixture through a sieve using a wooden spoon to remove the pips
  6. Add the sugar, salt, vinegar and mustard powder to the mixture
  7. Put all the spices in a cheese cloth and add to the mixture
  8. Boil the mixture and stir it now and again till the volume has decreased by a third and is the thickness of custard
  9. Remove the spices
  10. Pour into clean bottles and seal while warm
