Sweet and Sour Carrots

Ingredients
  • 500 gr Carrots (thickly sliced)
  • 30 ml Oil
  • 1 Onion (sliced)
  • 2 Large Celery stalks (sliced)
  • 10 ml Soy sauce
  • 10 ml Cornflour
  • 15 ml Brown sugar
  • 15 ml Cider vinegar
  • 10 ml Lemon juice
Instructions
  1. Cook the carrots in salted boiling water for 15 minutes until tender
  2. Drain, reserving 150 ml of the cooking liquid
  3. Heat the oil in a frying pan
  4. fry the onions and celery for 5 minutes while stirring them
  5. Add the carrots and mix well
  6. Remove from the heat
  7. Mix together cornflour and soy sauce
  8. Add sugar, cider vinegar and lemon juice
  9. Stir in the carrot liquid
  10. Pour over the vegetables
  11. Bring to the boil and cook for 3 minutes
