Sweet and Sour Carrots

Ingredients
- 500 gr Carrots (thickly sliced)
- 30 ml Oil
- 1 Onion (sliced)
- 2 Large Celery stalks (sliced)
- 10 ml Soy sauce
- 10 ml Cornflour
- 15 ml Brown sugar
- 15 ml Cider vinegar
- 10 ml Lemon juice
Instructions
- Cook the carrots in salted boiling water for 15 minutes until tender
- Drain, reserving 150 ml of the cooking liquid
- Heat the oil in a frying pan
- fry the onions and celery for 5 minutes while stirring them
- Add the carrots and mix well
- Remove from the heat
- Mix together cornflour and soy sauce
- Add sugar, cider vinegar and lemon juice
- Stir in the carrot liquid
- Pour over the vegetables
- Bring to the boil and cook for 3 minutes
