Sweet Onion Jam

Ingredients
  • 3 tbs Butter
  • 1 tbs Oil
  • 1 kg Onions
  • 1 Cup Light Brown Sugar
  • 90 ml Balsamic Vinegar
  • 1/3 Cup Red Wine
  • Large Pinch of Salt
Instructions
  1. Thinly slice the onions
  2. Heat the butter and oil in a heavy based saucepan
  3. Gently fry the onions for 15-20 min, stirring from time to time till soft and translucent
  4. Add the sugar, vinegar, wine and salt and cook over a low heat till the sugar is dissolved
  5. Cook for a further 20-30 min until syrupy
  6. Pour into a glass jar
  7. Once cool store in the fridge
  8. Use within a week
