Sweet Onion Jam

Ingredients
- 3 tbs Butter
- 1 tbs Oil
- 1 kg Onions
- 1 Cup Light Brown Sugar
- 90 ml Balsamic Vinegar
- 1/3 Cup Red Wine
- Large Pinch of Salt
Instructions
- Thinly slice the onions
- Heat the butter and oil in a heavy based saucepan
- Gently fry the onions for 15-20 min, stirring from time to time till soft and translucent
- Add the sugar, vinegar, wine and salt and cook over a low heat till the sugar is dissolved
- Cook for a further 20-30 min until syrupy
- Pour into a glass jar
- Once cool store in the fridge
- Use within a week
