Ingredients
  • 1 Tin apricot jam
  • 500 Gram self raising flour
  • 250 Gram margarine
  • 1 Tsp vanilla essence
  • 2 Eggs
  • 1 Cup sugar
Instructions
  1. Preheat oven to 200 C
  2. Beat together the margarine, sugar, vanilla and eggs
  3. Add the flour and mix well to form a dough
  4. Divide the dough into two pieces
  5. Place one ball of dough in the fridge for 20 minutes
  6. Roll out other ball of dough in a baking tray
  7. Spread with apricot jam
  8. Grate the refrigerated dough over the top of the jam
  9. Bake for 15 minutes till golden brown
