A tasty winter warmer that only gets better with a glass of red wine to go with it.
Ingredients
  • 500 g Oxtail
  • 15 ml Sunflower Oil
  • 1 Large Onion (Diced)
  • 4 Med Potatoes ( Peeled and Quartered)
  • 2 Stalks Celery Diced
  • 4 Med Carrots (Quartered)
  • 10 ml Salt
  • Fresh Ground Pepper to Taste
  • 2 Bay Leaves
  • 2 Whole Cloves
  • 150 ml Stock
  • 1 450 g Tin Diced Tomatoes
  • 1 Tin Butter Beans
  • 100 g Black Mushrooms (Sliced)
  • 60 ml Sherry
  • 1 Clove Garlic (Crushed)
Instructions
  1. Remove any excess fat from the oxtail
  2. Heat the oil and brown the meat in a heavy based casserole pot
  3. Add the onion, celery, carrots and potatoes and cook gently
  4. Add the spices, warmed up stock and tomatoes
  5. Place lid on casserole and simmer for 3 hours till the meat is tender
  6. Add the sherry, mushrooms and butter beans
  7. Simmer for 30 min
  8. Serve hot on a bed of rice
