A tasty winter warmer that only gets better with a glass of red wine to go with it.
Ingredients
- 500 g Oxtail
- 15 ml Sunflower Oil
- 1 Large Onion (Diced)
- 4 Med Potatoes ( Peeled and Quartered)
- 2 Stalks Celery Diced
- 4 Med Carrots (Quartered)
- 10 ml Salt
- Fresh Ground Pepper to Taste
- 2 Bay Leaves
- 2 Whole Cloves
- 150 ml Stock
- 1 450 g Tin Diced Tomatoes
- 1 Tin Butter Beans
- 100 g Black Mushrooms (Sliced)
- 60 ml Sherry
- 1 Clove Garlic (Crushed)
Instructions
- Remove any excess fat from the oxtail
- Heat the oil and brown the meat in a heavy based casserole pot
- Add the onion, celery, carrots and potatoes and cook gently
- Add the spices, warmed up stock and tomatoes
- Place lid on casserole and simmer for 3 hours till the meat is tender
- Add the sherry, mushrooms and butter beans
- Simmer for 30 min
- Serve hot on a bed of rice
