Prawns in Peri Peri Sauce

Ingredients
- Prawns
- 20-24 Large Prawns
- 20 ml Oil
- Salt and Pepper
- 1 Fresh Lemon
- Marinade
- 125 ml Olive Oil
- 15 ml Lemon Zest
- 125 ml Lemon Juice
- 3 Garlic Cloves (Crushed)
- 15 ml Peri Peri
- 15 ml Fresh Grated Ginger
- 2 ml Turmeric
- 2 ml Paprika
Instructions
- Cut open the prawn shells along the back and remove the dark vein before placing in a glass dish
Marinade
- Mix all the marinade ingredients together and pour over the prawns
- Leave to marinade for 3 hours turning once or twice
- Drain and reserve the marinade
Cooking
- Heat the oil in a frying pan till very hot
- Stir fry the prawns in bunches of 6 or 7 till they turn pink and crispy on the outside about 3-4 min
- Remove from the pan and set aside
- Pour the marinade into the pan and bring to the boil
- Return the prawns to the boiling marinade and stir fry for 2 min
- Season well with salt and pepper and a the juice of the lemon
- Serve immediately with fresh bread
