Prawns in Peri Peri Sauce

Ingredients
  • Prawns
  • 20-24 Large Prawns
  • 20 ml Oil
  • Salt and Pepper
  • 1 Fresh Lemon
  • Marinade
  • 125 ml Olive Oil
  • 15 ml Lemon Zest
  • 125 ml Lemon Juice
  • 3 Garlic Cloves (Crushed)
  • 15 ml Peri Peri
  • 15 ml Fresh Grated Ginger
  • 2 ml Turmeric
  • 2 ml Paprika
Instructions
  1. Cut open the prawn shells along the back and remove the dark vein before placing in a glass dish
Marinade
  1. Mix all the marinade ingredients together and pour over the prawns
  2. Leave to marinade for 3 hours turning once or twice
  3. Drain and reserve the marinade
Cooking
  1. Heat the oil in a frying pan till very hot
  2. Stir fry the prawns in bunches of 6 or 7 till they turn pink and crispy on the outside about 3-4 min
  3. Remove from the pan and set aside
  4. Pour the marinade into the pan and bring to the boil
  5. Return the prawns to the boiling marinade and stir fry for 2 min
  6. Season well with salt and pepper and a the juice of the lemon
  7. Serve immediately with fresh bread
