Garlic and Herb Potato Wedges

Ingredients
  • 4 Med Potatoes (Scrubbed and Rinsed)
  • 3 tbs Olive Oil
  • 4 Cloves Garlic (Crushed)
  • 1/2 tsp Dried Rosemary
  • 1/2 tsp Dried Oregano
  • 1/2 tsp dried Thyme
  • 1/2 tsp Paprika
  • 1/2 tsp ground Black Pepper
  • 1 tsp Salt
Instructions
  1. Preheat the oven to 220 C
Wedges
  1. Cut the potatoes in half lengthwise
  2. Cut each half lengthwise into 4 equally sized wedges
  3. Add the potatoes to a large bowl with the other ingredients and toss to cover the wedges evenly
Bake
  1. Line a baking pan with foil
  2. Place wedges skin side down on the foil
  3. space evenly so that they cook uniformly
  4. Bake for 35 min until well browned, crusty edged and tender
  5. Serve immediately, sprinkle with more salt if needed
