Creamy Banana Layer Cake

Ingredients

- 3 Ripe bananas
- 125 ml Buttermilk
- 5 ml Vanilla essence
- 185 gm Butter
- 375 gm Sugar
- 2 Eggs
- 500 gm Cake flour
- 5 ml Baking powder
- 5 ml Bicarbonate of soda
- 2.5 ml Salt
- 200 gr Finely chopped pecan nuts

- 250 ml Cream
- 35 ml Sugar
- 5 ml Vanilla essence
Instructions
- Preheat oven to 180 C
- Peel the bananas and mash them
- Combine the bananas with the buttermilk and vanilla essence
- Cream the butter and sugar together and the eggs in one at a time
- Add flour and salt alternatively with the banana and buttermilk to the creamed mixture while beating
- Stir in the nuts (reserving 50 gr for the topping)
- Stir in bicarbonate of soda and baking powder
- Pour the batter into two greased 20 cm cake pans
- Bake for 30 minutes
- Turn out cakes and cool
- Beat together the cream, sugar and vanilla essence till stiff
- Spread the cream between the layers and on top
- Sprinkle with nuts
