Ingredients
  • [b]Cake[/b]
  • 3 Ripe bananas
  • 125 ml Buttermilk
  • 5 ml Vanilla essence
  • 185 gm Butter
  • 375 gm Sugar
  • 2 Eggs
  • 500 gm Cake flour
  • 5 ml Baking powder
  • 5 ml Bicarbonate of soda
  • 2.5 ml Salt
  • 200 gr Finely chopped pecan nuts
  • [b]Icing[/b]
  • 250 ml Cream
  • 35 ml Sugar
  • 5 ml Vanilla essence
Instructions
  1. Preheat oven to 180 C
  2. Peel the bananas and mash them
  3. Combine the bananas with the buttermilk and vanilla essence
  4. Cream the butter and sugar together and the eggs in one at a time
  5. Add flour and salt alternatively with the banana and buttermilk to the creamed mixture while beating
  6. Stir in the nuts (reserving 50 gr for the topping)
  7. Stir in bicarbonate of soda and baking powder
  8. Pour the batter into two greased 20 cm cake pans
  9. Bake for 30 minutes
  10. Turn out cakes and cool
  11. Beat together the cream, sugar and vanilla essence till stiff
  12. Spread the cream between the layers and on top
  13. Sprinkle with nuts
