A great vegetarian option that even the biggest meat eater will love
Ingredients
  • 250 g Brown Lentils
  • 1 tsp Salt
  • 2 Medium Potatoes ( Cubed)
  • 1 Large Onion (Chopped)
  • 1 tbs Sunflower Oil
  • 1/2 tsp Cumin Powder
  • 1/2 tsp Cumin Seed
  • 1/2 tsp Garum Masala
  • 1 tsp Chilli Powder
  • 3 cm Fresh Ginger (Chopped)
  • 3 Cloves Garlic (Crushed)
  • 2 Cardamom Pods
  • 1/2 tsp Mustard Seed
  • 6 Curry Leaves
  • 3 Tomatoes (Chopped)
Instructions
  1. Cook the lentils in boiling water with salt for 40 min until al dente
  2. Strain the water away but keep it
  3. Cook the cubed potatoes for 10 min until just cooked, then remove from water
  4. Fry the onions in the oil and add all the spices, garlic and ginger
  5. add the chopped tomatoes and curry leaves
  6. Combine with the potatoes and lentils
  7. Add a little of the lentil water depending on how dry or moist you like your curry
  8. Serve with rice and chutney
