Lentil Curry

A great vegetarian option that even the biggest meat eater will love
Ingredients
- 250 g Brown Lentils
- 1 tsp Salt
- 2 Medium Potatoes ( Cubed)
- 1 Large Onion (Chopped)
- 1 tbs Sunflower Oil
- 1/2 tsp Cumin Powder
- 1/2 tsp Cumin Seed
- 1/2 tsp Garum Masala
- 1 tsp Chilli Powder
- 3 cm Fresh Ginger (Chopped)
- 3 Cloves Garlic (Crushed)
- 2 Cardamom Pods
- 1/2 tsp Mustard Seed
- 6 Curry Leaves
- 3 Tomatoes (Chopped)
Instructions
- Cook the lentils in boiling water with salt for 40 min until al dente
- Strain the water away but keep it
- Cook the cubed potatoes for 10 min until just cooked, then remove from water
- Fry the onions in the oil and add all the spices, garlic and ginger
- add the chopped tomatoes and curry leaves
- Combine with the potatoes and lentils
- Add a little of the lentil water depending on how dry or moist you like your curry
- Serve with rice and chutney
