Marshmallow and Chocolate Delights: A Sweet Treat Adventure

Indulge in a delightful confectionery creation that’s sure to tantalize your taste buds. These marshmallow and chocolate delights are a mouthwatering blend of sweet, creamy, and chewy goodness. Gather your ingredients and let’s embark on this culinary journey!

Ingredients:
  • 4 cups white sugar
  • 1 x 410g can of evaporated milk (Nestlé or Carnation for preference)
  • 125g butter
  • 18 white marshmallows (Yaldor for preference)
  • 4 x 100g chocolate bars (white, milk, dark, fruit-infused, etc.)
  • Optional toppings: cherries, nuts, ginger, crushed pineapple, grenadilla pulp, etc.
Instructions:

Preparation
Begin by buttering a heavy saucepan and spraying a baking tray with non-stick cooking spray.
Set both aside as you prepare the dry ingredients for this delectable treat.

Chocolate and More
Grate the chocolate bars to create fine chocolate shavings.
If you’re using cherries or any other optional toppings, chop them into bite-sized pieces. 
As for the marshmallows, slice them into thirds or quarters to ensure they blend perfectly into the mixture.

The Syrup
Combine the sugar and evaporated milk in your saucepan, mixing lightly until you achieve a smooth consistency.
Heat this mixture slowly, stirring continuously to prevent sticking or burning.

Buttered Bliss
Once the syrup is smooth, add cubes of butter one at a time.
Stir until each cube melts completely before adding the next.
This gradual addition will infuse your sweet concoction with a rich, buttery flavour.

Boil and Watch
Bring the mixture to a gentle boil while stirring continually.
Be cautious to prevent it from boiling over, as it will reduce back to its original volume when nearing the right temperature.
If you don’t have a candy thermometer,  employ the “soft ball test” by dropping a spoonful into iced water to gauge the desired consistency.

Swift Finishing Touches
Remove the saucepan from the heat and place it in cold water to stop the cooking process.
Here, you’ll need to act quickly.
Add the dry ingredients and gently stir in 1 teaspoon of vanilla essence or any desired colouring and flavouring until you achieve a smooth and consistent mixture.

Cooling and Cutting
Pour the mixture into the prepared baking tray and allow it to cool for a while.
Once it’s set but still pliable, score it with a knife to create neat portions.
Let it cool completely, which will take approximately 3 hours, before cutting it into cubes.

This recipe yields around 96 cubes, depending on your preferred thickness and the size of your baking tray.
