Feta Cheese, Potato and Rosemary Bread

This bread is best eaten on the day it is baked.
Ingredients
- 175 Self Raising Flour plus Extra for Dusting
- 5 ml Salt
- Pinch of Cayenne Pepper
- 1 Large Potato
- 4 Spring Onions (Finely Chopped)
- 10 ml Fresh Rosemary (Chopped)
- 110 g Feta Cheese (Cubed)
- 1 Large Egg
- 30 ml Milk
- 6 ml Grainy Mustard
Instructions
- Preheat the oven to 190 C
- Sift the flour, salt and cayenne pepper into a mixing bowl
- Peel the potato and coarsely grate into the flour
- Add the spring onions, rosemary and 2/3 of the feta cheese
- Combine the egg , milk and mustard and add to the mixture
- Blend together with a knife
- Transfer to a baking sheet and pat into a rough round loaf shape
- Press the remaining feta over the surface, dust with a little flour and scatter with extra herbs
- Bake on the middle shelf of the oven for 50 min or until bread is golden brown
