Feta Cheese, Potato and Rosemary Bread

This bread is best eaten on the day it is baked.
Ingredients
  • 175 Self Raising Flour plus Extra for Dusting
  • 5 ml Salt
  • Pinch of Cayenne Pepper
  • 1 Large Potato
  • 4 Spring Onions (Finely Chopped)
  • 10 ml Fresh Rosemary (Chopped)
  • 110 g Feta Cheese (Cubed)
  • 1 Large Egg
  • 30 ml Milk
  • 6 ml Grainy Mustard
Instructions
  1. Preheat the oven to 190 C
  2. Sift the flour, salt and cayenne pepper into a mixing bowl
  3. Peel the potato and coarsely grate into the flour
  4. Add the spring onions, rosemary and 2/3 of the feta cheese
  5. Combine the egg , milk and mustard and add to the mixture
  6. Blend together with a knife
  7. Transfer to a baking sheet and pat into a rough round loaf shape
  8. Press the remaining feta over the surface, dust with a little flour and scatter with extra herbs
  9. Bake on the middle shelf of the oven for 50 min or until bread is golden brown
