My brother swears by this recipe and claims if you follow it, it is flop proof.
Ingredients
  • 3 Cups White Bread Flour
  • 3/4 Cup Warm Water
  • 1/2 Cup Milk
  • 7 g Yeast
  • 2 tbs Oil
  • 1 tbs Sugar
  • 1 tsp Salt
Instructions
  1. Mix water and sugar and stir till sugar is disolved
  2. Add flour, oil and yeast
  3. Mix together
  4. Add salt and mix in
  5. Turn out and knead for 10 min
  6. Coat dough in oil and place in large bowl
Proof
  1. Wrap bowl in a blanket and leave to rise for 2 hours until double in size
  2. Remove from bowl and knock the dough back
Fold
  1. Roll out into a rectangle
  2. Fold sides of dough into the middle and pinch together
  3. Fold ends in
  4. Place folded side down in a greased loaf tin
  5. Cover with a cloth and leave to rest for 30 min
Bake
  1. Preheat oven to 180 C
  2. Make 3 slices with a sharp knife across top of the bread
  3. Brush top with water
  4. Bake for 45 min
  5. Brush top with water 3 times during the baking process
  6. Remove and leave to cool in a wire rack
  7. (For a soft crust wrap the loaf as it cools, for a crisp crust leave uncovered to cool)
