Chicken Stroganoff

Ingredients
  • 2 tbs Sunflower Oil
  • 650 g chicken Breasts (Halved and Cut into Strips)
  • 2 Cups Mushrooms (Sliced)
  • 1 Med Onion (Chopped)
  • 1 410 g Tin Condensed Cream of Chicken Soup
  • 1/2 Cup Low fat Plain Yogurt
  • 1/4 Cup Water
  • 1 tsp Paprika
Instructions
  1. Heat 1 tsp oil in a pan
  2. Add chicken and cook till well brown, stirring often
  3. Remove the chicken from the pan
  4. Heat the remaining oil in the pan
  5. Add the mushrooms and onion and cook till tender
  6. Stir the soup, yogurt and water into the pan and heat to the boil
  7. Return the chicken to the pan
  8. Reduce the heat to low
  9. Cook for 5 min till chicken is cooked through
  10. Sprinkle with paprika
  11. Serve the chicken with sauce and pasta
