Chicken Stroganoff

Ingredients
- 2 tbs Sunflower Oil
- 650 g chicken Breasts (Halved and Cut into Strips)
- 2 Cups Mushrooms (Sliced)
- 1 Med Onion (Chopped)
- 1 410 g Tin Condensed Cream of Chicken Soup
- 1/2 Cup Low fat Plain Yogurt
- 1/4 Cup Water
- 1 tsp Paprika
Instructions
- Heat 1 tsp oil in a pan
- Add chicken and cook till well brown, stirring often
- Remove the chicken from the pan
- Heat the remaining oil in the pan
- Add the mushrooms and onion and cook till tender
- Stir the soup, yogurt and water into the pan and heat to the boil
- Return the chicken to the pan
- Reduce the heat to low
- Cook for 5 min till chicken is cooked through
- Sprinkle with paprika
- Serve the chicken with sauce and pasta
