Brandy Snaps

Ingredients
- 60 gram Butter
- 60 gram Sugar
- 1/2 cup Syrup
- 60 gram Flour
- 1 tsp Ground ginger
- 2 tsp Lemon juice
- 1/2 cup Double cream
Instructions
- [b][u]Mixture[/u][/b]
- Add butter, sugar and syrup to a pan and cook over a low heat till melted
- Sift together the flour and ginger and add to the melted mixture
- Add the lemon juice

- Drop 4 tsp of mixture on a large buttered baking try
- Drop well apart to allow for spreading
- Bake in the centre of the oven for 8 minutes
- Leave for 1 minute
- Lift of with a palette knife
- Roll quickly and loosely around the buttered handle of a wooden spoon
- Leave till firm then slide off
- Repeat with the rest of the mixture
- When cold fill both ends of each with stiffly whipped cream
