Roast Chicken

I have a feeling Mum might have borrowed this one from the Naked Chef. Took us for ever to convince her he did not cook without his clothes.
Ingredients
- 115 Butter
- 15 ml Oil
- 20 ml Thyme (Chopped)
- 4 Thyme Stalks
- Zest of 1Lemon Plus the Lemon
- 1 Large Free Range Chicken
- Salt and Pepper
- 3 Cloves Garlic (Crushed But Not Peeled)
Instructions
- Mix the thyme, zest and butter together with your hands
- Loosen the skin over the breasts with your fingers
- Massage 1/2 the butter mixture under the skin
- Slash the thighs and legs and rub with the remaining butter mixture
- Stuff the chicken with the zested lemon
- Season with salt and pepper
- Place in baking dish with the oil and crushed garlic and thyme stalks
- Bake for 45 min per Kg
