Roast Chicken

I have a feeling Mum might have borrowed this one from the Naked Chef. Took us for ever to convince her he did not cook without his clothes.
Ingredients
  • 115 Butter
  • 15 ml Oil
  • 20 ml Thyme (Chopped)
  • 4 Thyme Stalks
  • Zest of 1Lemon Plus the Lemon
  • 1 Large Free Range Chicken
  • Salt and Pepper
  • 3 Cloves Garlic (Crushed But Not Peeled)
Instructions
  1. Mix the thyme, zest and butter together with your hands
  2. Loosen the skin over the breasts with your fingers
  3. Massage 1/2 the butter mixture under the skin
  4. Slash the thighs and legs and rub with the remaining butter mixture
  5. Stuff the chicken with the zested lemon
  6. Season with salt and pepper
  7. Place in baking dish with the oil and crushed garlic and thyme stalks
  8. Bake for 45 min per Kg
