Mums Cottage Pie

This hearty meal has always been one of my all time favorites. Good old comfort food.
Ingredients
- Pie
- 1 Onion
- 1 Carrot
- 1 tbs of Oil
- 500g Beef Mince
- 2 tbs Flour
- 1 tbs Tomato Sauce
- 1 tbs Worcester Sauce
- 1/2 Cup Frozen Peas
- 1/2 Cup Frozen Sweet Corn
- Small Bunch Chopped Herbs (Parsley, Thyme and Rosemary)
- 1 Bay Leaf
- 3/4 Cup Beef Stock
- Mash
- 3 to 4 Large potatoes
- 4 tbs Milk
- 1 tbs Butter
- Salt/Pepper
Instructions
Pie
- Peel and cop the onion and carrot finely
- Heat the oil in a large frying pan
- Add the onion and cook till translucent
- Add the minced beef and fry using a wooden spoon to break up the mince so that it is nice and fine
- When the mince is thoroughly browned stir through the flour and cook for 1 min
- Add the tomato sauce, worcester sauce, carrot, peas, corn, herbs and bay leaf
- Stir thoroughly to combine
- Gradually add the stock and bring to the boil
- Reduce the heat an cover
- Simmer for 10 to 15 min
- Add salt and pepper to taste
- The mixture should be quite thick
- Remove the bay leaf and set mixture aside
Mash
- Peel the potatoes and chop into quarters
- Place potatoes in med saucepan with cold water just covering the potatoes
- Add salt to the water and bring to the boil
- Reduce heat and simmer for 10 to 15 min until the potatoes are tender
- Drain well
- Mash the potatoes with the butter and milk until very creamy
- Add salt to taste
Bake
- Preheat the oven to 190° C
- Spoon the mince mixture into a pie dish
- Spoon the mash over the mince
- Bake for 15 to 20 min until potato is golden and pie heated through
