Coronation Chicken

Ingredients
- 1 Large chicken (cooked and removed from the bone)
- 15 ml Oil
- 1 Small onion (chopped)
- 10 ml Curry powder
- 5 ml Tomato puree
- 125 ml Red Wine
- 60 ml Water
- 1 Bay leaf
- 2 Slices of lemon
- 60 ml Apricot jam
- 300 ml Mayonnaise
- 150 ml Plain yogurt
- [b]Garnish[/b]
- Paprika
- Cucumber slices
Instructions
- Heat oil and fry onion for 4 minutes
- Add curry powder and cook for 1 minute
- Add tomato puree, wine, bay leaf and lemon slices
- Simmer uncovered for 10 minutes until well reduced
- Strain and cool completely
- Slowly beat the cooled sauce into the mayonnaise
- Add apricot jam and yogurt, adjust the seasoning
- Coat the chicken pieces with the mayonnaise mix.
- Place on a serving dish and garnish
