Coronation Chicken

Ingredients
  • 1 Large chicken (cooked and removed from the bone)
  • 15 ml Oil
  • 1 Small onion (chopped)
  • 10 ml Curry powder
  • 5 ml Tomato puree
  • 125 ml Red Wine
  • 60 ml Water
  • 1 Bay leaf
  • 2 Slices of lemon
  • 60 ml Apricot jam
  • 300 ml Mayonnaise
  • 150 ml Plain yogurt
  • [b]Garnish[/b]
  • Paprika
  • Cucumber slices
Instructions
  1. Heat oil and fry onion for 4 minutes
  2. Add curry powder and cook for 1 minute
  3. Add tomato puree, wine, bay leaf and lemon slices
  4. Simmer uncovered for 10 minutes until well reduced
  5. Strain and cool completely
  6. Slowly beat the cooled sauce into the mayonnaise
  7. Add apricot jam and yogurt, adjust the seasoning
  8. Coat the chicken pieces with the mayonnaise mix.
  9. Place on a serving dish and garnish
