Smooth Tomato Jam

This recipe was from my moms friend Rosmary.
Ingredients
  • 3 kg Tomatoes
  • 3 kg Sugar
  • 7 cm Fresh Ginger (Bruised)
  • 3 Slices of Lemon
  • Juice of 1 Lemon
Instructions
  1. Pour boiling water over the tomatoes and peel them
  2. Chop the tomatoes into small pieces
  3. Layer the tomatoes and sugar in a large pot
  4. Add the ginger
  5. Leave to stand for 3 hours
  6. Slowly heat the pot till all the sugar has dissolved
  7. Bring to the boil until it reaches the jam like state
  8. Only stir a few times to prevent burning
  9. Add the lemon slices and lemon juice to prevent sugar crystals from forming, before putting in jars
