Smooth Tomato Jam

This recipe was from my moms friend Rosmary.
Ingredients
- 3 kg Tomatoes
- 3 kg Sugar
- 7 cm Fresh Ginger (Bruised)
- 3 Slices of Lemon
- Juice of 1 Lemon
Instructions
- Pour boiling water over the tomatoes and peel them
- Chop the tomatoes into small pieces
- Layer the tomatoes and sugar in a large pot
- Add the ginger
- Leave to stand for 3 hours
- Slowly heat the pot till all the sugar has dissolved
- Bring to the boil until it reaches the jam like state
- Only stir a few times to prevent burning
- Add the lemon slices and lemon juice to prevent sugar crystals from forming, before putting in jars
